Three Roasted Pumpkin Seed Recipes! I really love roasted pumpkin seeds but after decades of eating them with oil and salt, I’m looking to mix things up a bit. Check out these delish looking recipes for a new twist on pumpkin seeds.
NOTE: I’ve included the ingredients and a link to the recipe and preparation instructions. Directions for roasting pumpkin seeds vary wildly across the internet from temperature (I’ve seen everything from 250 – 350) and cooking time (anywhere from 7 minutes to an hour).

1. Cinnamon Sugar Roasted Pumpkin Seeds
Ingredients
- 1 1/2 cups pumpkin seeds
- 2 tablespoons melted butter (or olive oil)
- 2 tablespoon granulated sugar
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/4 teaspoon salt

Ingredients
- 2 tablespoons dark brown sugar
- 1 tablespoon water
- 1½ teaspoons ground allspice
- ½ teaspoon salt
- ¼ teaspoon cayenne pepper
3. Salted Caramel Pumpkin Seeds

- 3 tablespoons granulated sugar
- 1/4 teaspoon ground cinnamon
- 1/4 teaspoon ground ginger
- 1/8 teaspoon ground nutmeg
- 2 cups raw pumpkin seeds, rinsed and pat dry
- Nonstick cooking spray
- 1 tablespoon butter
- 1 tablespoon each, brown sugar and granulated sugar
- 1/2 teaspoon salt
