Easy to Bake Breakfast Cookies that the Kids Will Love!
Breakfast bars are popular in my house and when I came across a recipe for breakfast cookies, I had to try it. I altered it a bit based on my own kids preferences (no raisins for the five year old!).
Ingredients for Breakfast Cookies

2 mashed bananas (overripe is best!)
1/3 cup of applesauce
3 cups of oats
1 tsp cinnamon (I used a cinnamon and sugar mix)
1 tsp vanilla
1/4 cup of crushed walnuts (optional)
1/4 cup of raisins (optional)
1/2 cup of chocolate chips (optional)
1 tbsp flax seed
1/4 cup of milk or almond milk
Baking Steps
To bake the breakfast cookies, I combined all the ingredients in a bowl after mashing the bananas. I chose to use walnuts and chocolate chips. I was surprised at how wet the batter was, but the oats soaked in the liquid while baking and they came out a perfect consistency.
I lined a baking sheet with parchment paper and cooked them for about 18 minutes. They were slightly browned on top and the bottoms were nice and toasted.
In the morning, I packed up the breakfast cookie for their morning snack at school and the kids were excited to eat cookies in the morning! Win, Win!
